What what! Taco Tuesday! Have you caught on to a theme in our house? Well maybe I like tacos a lil...and by a little, I mean A LOT!
Our go to is usually taco salad, but not this Tuesday. I wanted to go for something different. And did I mention, this was my first time making steak fajitas.
The marinate is super easy to make. The recipe recommended 24 hours, but I only had time for 2 hours. And guess what? They tasted totally fab! Now I could only imagine how they would have tasted, if I had let them sit for 24 hours. I cut up some bell peppers with healthy fat, salt and pepper. Every fajita needs peppers in it.
Did you notice one plain steak? He he, that was my back up plan. A girl must always be prepared. Right? I was a little concerned on the spicey-ness, hubby is not a spicey lover. No worries, it would have been more for me!
Once everything was done, I used a quinoa and brown rice base. Layer on fresh spring greens and peppers. Then top with sliced steak and dressing. Absolutely perfect!
BBQ Steak Fajita with Cilantro Avocado Dressing
BBQ Steak Fajita
Ingredients:
2lb steak (I used sirloin)
1 tbsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp coriander
1.5 tsp chipotle powder
¼ cup lime juice
¼ cup apple cider vinegar
½ cup healthy fat (avocado oil, olive oil)
¼ cup soy sauce
Directions:
Mix all ingredients in ziploc bag and marinate in fridge for 24 hours.
Cilantro Avocado Dressing
Ingredients:
1 avocado
¼ cup chopped cilantro
1 tbsp minced garlic
¼ cup lime juice
½ cup water
2 tbsp apple cider vinegar
⅓ cup healthy fat (avocado oil, olive oil)
1 tsp cumin
1 tsp salt
⅓ cup pumpkin seeds
Directions:
Mix all ingredients in food blender (ninja), and blend until smooth.
And enjoy!
